Recipe: Corn Pancakes with Whole Corn Kernels (sugar-free)

Sugar-free | Vegetarian | Dairy-free | Vegetable Oil-free

Ingredients:

  • 1 can of corn kernels or 2 ears of fresh corn with the kernels cut off*
  • 2 tbsp coconut oil
  • 1 egg
  • 1 1/4 cup milk
  • 1 pinch cayenne pepper (optional) or 1 tsp vanilla
  • 1/2 whole wheat cup flour
  • 1/4 cup unbleached white flour
  • 1 cup cornmeal flour
  • 2 tsp baking powder
  • 1/4 tsp salt

Directions:

  1. Combine egg, milk, coconut oil, vanilla (optional) in food processor.
  2. Combine dry ingredients in a glass or metal bowl.
  3. Add wet ingredients and combine but don’t over stir. Add whole kernels and stir.
  4. Add more milk if needed until the right waffle or pancake batter consistency is achieved.
  5. Grill on pancake griddle approx 4 mins on each side. Spray with coconut oil spray if needed to prevent sticking.

Stores well in the refrigerator for later use of leftover batter.

*Cut off kernels then steam for 5-8 mins before using in pancakes

Serve with any of the 8 pancake/waffle toppings that aren’t sugary syrup.
