Recipe: Chocolate Banana Tahini Protein Pancakes

Ingredients:

  • 2 cups flour

  • 1/4 cup coconut flour

  • 1/4 no-sugar-added protein powder (I like unsweetened pea protein)

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 cup unsweetened cocoa powder

  • 1 banana

  • 1 pinch or 1/2 dropper of stevia

  • 2 cups almond milk

  • 2 eggs

  • 2 tbsp coconut oil

  • 2 tbsp tahini

Combine banana, stevia milk, eggs, coconut oil, and tahini in food processor until blended.

Combine dry ingredients in a bowl.

Add wet ingredients and combine but don’t over stir. Add more milk if needed until the right waffle or pancake batter consistency is achieved.

Pour half a cup on a heated pan. Heat about 4 minutes each side.

Stores well in the refrigerator for later use of leftover batter.

Serve with any of these pancake/waffle toppings that aren’t sugary syrup.
